When missing Spain…

Hola!!!

One of my advices when missing being home and in the country we love the most is making ourselves feel at home. Let me explain, there are days where you are going to miss home so much, your family, your friends, the food, and this is very normal to experience, but to lighten up your mood, I suggest with your closest friends at University, invite them over for dinner and make a typical Spanish dish!!

I do this very often with my friends, one of my housemates is a very close friend of mine and she’s also Spanish, so we host dinner parties every now and then and we have over our other Hispanic friends or English friends… and we meet up together and we make something typical in Spain.

Our to go to dish is Tortilla de Patata, and in this blog, I’ll be teaching you how to make it, so that you can also make it with your friends!!!

Ingredients: (Recipe for 1 person)

  1. 1 medium sized potato
  2. 4 medium sized eggs
  3. A small pinch of onion
  4. Salt (up to personal preference)
  5. Extra Virgin Olive Oil(Olive oil)

Ingredients: (Recipe for x4 persons)

  1. 4 medium sized potatoes
  2. Buy a packet of 12 Large eggs, but you will use depending on the process
  3. A small handful of onion
  4. Salt (up to preference)
  5. Extra Virgin Olive Oil (Or any sort of Olive Oil)

Supplies you will need:

  1. 2 Medium sized pans (depending on size of potatoes)
  2. 1 small pan (just in case)
  3. Knife
  4. Round Spatula
  5. A fork
  6. Chopping Board
  7. A plate (A bit bigger than the size of the pan you will be using)
  8. 2 bowls

Instructions:

1)First cut thin slices (1cm) of potato, if the slice is very big, cut in half

2)Then put all of the potato in a bowl of water and let it soak for a while

3)In the meantime start pouring Extra Virgin Olive Oil on a medium/ large pan and let it heat up

4)Once you can see that small bubbles are starting to form in the Olive Oil, you can drain the water from the potatoes, dry them up with kitchen paper and then individually start adding them into the olive oil.

5)Then once you have filled the pan with potatoes to a point where no more fit, you add the onions, you wait and using a fork you test if the potatoes are ready. When you pinch with the fork and the potatoes break, they are ready to come out.

6) On a different bowl, you prepare 4 whisked eggs, (depending on the amount of potatoes, you add 4 medium eggs or 4 large eggs) and on top of that you add the potatoes that you spoon out of the olive oil using a spatula, but try and wait for the olive oil to drain as much as you can when taking them out of the hot pan and putting them into the bowl.

7)Here is where you add salt (up to personal preference). Also, if you can see too much potato, add one or two more eggs. There should be a ratio between them.

8) On another pan (depending on the amount of people you have coming over, will depend on the size of the tortilla.

*RECOMENDATION: If its only 2 people that are having the Tortilla de Patata, use a small pan (typical small size pan from IKEA), it is easier to control the juiciness of the tortilla :)*

9)Add a spoonful of the olive oil from the pan you cooked the potatoes and add it to the new one, heat is up and once its ready, pour all the mixture onto it.

10)Having it at a high heat, wait 1/2 mins, then grab a plate cover the pan and flip it over (this is usually the scary part, but trust me its not that bad :). Then wait for it to cook 1/2 more mins and it ready, grab another plate and flip it and TADAAAA its ready.

11)If you have more mixture, then keep on adding and repeating steps 9 and 10.
